Classic Ukrainian Borsch with Beets and Sour Cream

<h2>Putting It Together</h2>

<p>Start by browning the beef. Do not crowd the pot. Do it in batches if you have to.</p>

<p>That brown crust on the meat is pure flavor. If you skip it, you will taste the difference.</p>

<p>Once the beef is browned, set it aside. Cook the onion in the same pot until it softens. Then stir in the tomato paste and let it cook for a minute. That little step deepens the tomato flavor dramatically.</p>

<p>Add the broth and return the beef to the pot. Bring it to a boil. Then drop the heat to a gentle simmer. Cover it and walk away for 30 minutes.</p>

<p>Now add the beets, carrots, and potatoes. Simmer another 20 minutes.</p>

<p>Then add the cabbage, bay leaves, caraway seeds, and garlic. Simmer 20 more minutes.</p>

<p>Taste it. Season with salt and pepper. Add the vinegar. Simmer 10 more minutes.</p>

<p>Remove the bay leaves. Done.</p>

<h2>The One Thing That Can Go Wrong</h2>

<p>The beets can turn mushy. This happens when you cook them too long or cut them too small.</p>

<p>Julienne them right. Add them at the right time. And do not simmer for hours and hours. Two hours total is plenty.</p>

<p>If your beets are turning to mush, you are cooking them too long. Next time, add them later.</p>

<h2>How to Serve It</h2>

<p>Ladle it into deep bowls. The broth should be deep ruby red. Almost purple.</p>

<p>Top each bowl with a generous spoonful of sour cream. Not a drizzle. A dollop.</p>

<p>Then shower it with fresh dill. Not dried. Fresh.</p>

<p>Serve with dark rye bread and butter. That is how Olga taught me. The bread soaks up the broth. The butter adds richness.</p>

<p>My daughter eats hers with the sour cream stirred in until the whole bowl turns pink. She says that is the only way.</p>

<h2>Storing and Reheating</h2>

<p>Borsch gets better the next day. I do not know why. It just does.</p>

<p>Store it in the fridge for up to 5 days. The color will deepen overnight. The flavors will blend.</p>

<p>Reheat it gently on the stove. Do not boil it. The sour cream will separate if you add it before reheating. Just add fresh sour cream and dill to each bowl.</p>

<p>It also freezes well. Freeze it without the sour cream and dill. They do not freeze nicely.</p>

<p>Sometimes I use pork instead of beef. It works. The broth is lighter but still good.</p>

<p>Sometimes I add a can of white beans for extra heartiness. Olga frowned at that one. But my family liked it.</p>

<p>Sometimes I skip the meat entirely and use vegetable broth. My vegetarian friend loves it that way.</p>

<p>But the version I make most often is this one. The one Olga taught me. The one with beef and beets and that perfect splash of vinegar.</p>
