I pulled the last of the winter coats out of the trunk today. It's that time. The change happens fast here. One day we're all wearing sweaters and the next the sun is just insistent about being out.

So I looked at the chicken I'd thawed and decided tonight wasn't for slow braises. Tonight was for fire. For lemon. For the sound of a grill lighting up while the crickets start their evening chorus.

These skewers are the result. Bright. Simple. The kind of dinner that makes you forget the work week entirely.

The Work You Actually Do

It's mostly just chopping. Cubing chicken, cutting peppers and onions into chunks, squeezing lemons. That's the bulk of it. The marinade is a quick whisk in a bowl—olive oil, lemon juice, garlic, oregano, paprika, salt, pepper.

I used to measure everything precisely. Now I just dump and stir. It works the same.

The only real rule is letting the chicken sit in that lemon-garlic bath for at least 15 minutes. Longer is better. But 15 minutes? That works. I've done it in 10 when I was hangry. It still tasted good.

  • 2 teaspoons dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 yellow onion (cut into chunks)
  • 2 bell peppers (any color—cut into chunks)
  • 1 lemon (sliced into wedges)
  • 8 skewers (wooden or metal)

A note on chicken: breasts work fine here. They're lean and take the marinade well. But thighs? Also great. I've done both. If you use thighs, add a minute or two to the grill time. They're more forgiving. I always forget to check the internal temperature until the last minute. Aim for 165°F. But honestly, if it looks cooked and juices run clear, you're fine.

Putting It Together

First thing: if you're using wooden skewers, soak them in water for 30 minutes. I've forgotten this step and watched skewers catch fire on the grill. Not great. Set a timer.

Then make the marinade. Olive oil, lemon juice, garlic, oregano, paprika, salt, pepper. Whisk. Taste it. Adjust. I like a lot of oregano. My husband says it tastes like pizza. I consider that a compliment.

Toss the chicken cubes in the marinade. Use your hands. It's messy but satisfying. Cover and let it sit. 15 minutes minimum. 4 hours maximum. Any longer and the acid starts to cook the chicken—it gets mushy. Learned that the hard way.

While that sits, cut the vegetables. Onion into chunks, peppers into chunks. I pull the layers of the onion apart so you get rings and pieces—more surface area for grilling. The kids pick out the onion from their skewers and I pretend not to notice.

Thread everything onto skewers. Chicken, then pepper, then onion, repeat. Don't pack them too tight. Give them a little breathing room so they cook evenly. And leave a little space at the end of the skewer so you can flip them.

This is the part where I always realize I've used two skewers and have six more to go. I just keep going. It's meditative.

The Grill Part

Preheat your grill to medium-high. If you're using a grill pan indoors, same heat. You want a good sear.

Oil the grates. Use a paper towel dipped in oil and tongs. Or just spray it. I'm not the grill police.

Lay the skewers on the grill. Don't touch them for 3-4 minutes. Let them get those nice char marks. Then flip. Repeat. Total cook time is about 12-15 minutes, depending on thickness.

One thing that can go wrong: the chicken sticking. If it's pulling away when you try to flip, it's not ready. Wait another minute. The grill will release it when it's properly seared.

Another thing: the lemon wedges. I put them on the grill for the last 2 minutes. They get a little charred and smoky. Squeeze them over the finished skewers. That's the move.

Check the temperature. 165°F. If you don't have a thermometer, cut into the biggest piece. You'll know.

How to Eat Them

Pull the skewers off the grill and let them rest for 2 minutes. I know—it's hard. But the juices need to settle.

Serve them right on the cutting board. Family style. Everyone grabs their own. The kids pull everything off and eat it separately. That's fine.

I like these with a simple salad. Arugula, lemon juice, olive oil, salt. Nothing fancy. Or pita bread, warmed on the grill. Maybe some tzatziki if I have it. Most nights, it's just the skewers and some rice.

The lemon wedges go on the side. Squeeze them over everything. Don't be shy.

Leftovers? If you have any, they're good cold the next day. Chop them up and put them in a wrap. Or just eat them straight from the fridge. I do that more than I'd like to admit.
