My kitchen scale has been gathering dust for six months. I don’t feel bad about it.

This honey cake came together because I was too lazy to dig the scale out of the back cabinet. I measured everything by feel, guessed on the honey, and it turned out better than any weighed-and-measured version I’ve made before.

That’s the kind of recipe this is. One that forgives you.

A Cake That Isn't Picky

Honey cakes can be tricky. Too dry, too dense, too sweet. This one refuses to be any of those things.

The secret is sour cream. It keeps the crumb soft without making it heavy. I’ve used full-fat, low-fat, even Greek yogurt in a pinch. All worked.

Another thing: honey. Use the one you have, not the one a recipe tells you to buy. Clover, wildflower, orange blossom—it all works differently but always works. I’ve used buckwheat honey once and it made the cake darker and almost savory. My sister said it tasted like “fancy bread.” She meant that as a compliment.

Honey Cake with Vanilla Cream

What You Need

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup honey
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 3 large eggs
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 2 teaspoons vanilla extract for cream
  • 2 tablespoons honey for garnish

You probably have all of this. That’s the point. Nothing weird, nothing expensive.

Before You Start

Take the butter out of the fridge at least an hour before. I always forget this. If you’re like me, microwave it in 10-second bursts until it’s soft but not melted. It works. Don't let anyone tell you otherwise.

Preheat the oven to 350°F. Grease and flour a 9-inch round pan. I use butter and a dusting of flour. Parchment paper works too if you’re fancy.

Putting It Together

Whisk the flour, baking powder, baking soda, and salt in a bowl. Set it aside.

In a larger bowl, beat the softened butter and sugar together until they’re light and fluffy. This takes about 3 minutes with a hand mixer. Less if you’re using a stand mixer.

Add the eggs one at a time, beating well after each. Then pour in the honey and mix until combined. The batter will look a little looser than you expect. That’s okay.

Now alternate adding the flour mixture and the sour cream. Start with flour, then sour cream, then flour again, then sour cream, then finish with flour. Three additions of flour, two of sour cream. This keeps the batter smooth.

Stir in the vanilla. Pour the batter into the pan and smooth the top.

Baking and Waiting

Bake for 35-40 minutes. Start checking at 32 minutes if your oven runs hot. Insert a toothpick into the center. If it comes out clean or with a few crumbs, it’s done. If it’s wet, give it 5 more minutes.

Let the cake cool in the pan for 10 minutes. Then turn it out onto a wire rack. Let it cool completely. I mean completely. Warm cake will melt the cream.

This is the part where I usually put a movie on and forget about it for an hour.

The Cream

While the cake cools, make the vanilla cream. Pour the heavy cream into a cold bowl. Add the powdered sugar and vanilla extract. Whip with a hand mixer or whisk until stiff peaks form.

Stiff peaks means the cream holds its shape when you lift the beaters. If you over-whip, it turns into butter. If that happens, start over. I’ve done it three times in one afternoon. It happens.

Assembling Without Stress

Once the cake is completely cool, slice it in half horizontally. Use a long serrated knife. Slow, steady sawing motion. If it breaks, don’t panic. You can hide almost anything with cream.

Spread half the vanilla cream between the layers. Put the top back on. Spread the remaining cream over the top. Drizzle with honey.

Refrigerate for at least 30 minutes before serving. The cream sets and the honey gets a little thicker. It’s worth the wait.

One Thing That Can Go Wrong

The cake domes. Every time. That’s fine—just slice the dome off with a knife before splitting the cake. If you don’t, the top layer will slide around like a loose tooth.

Eat the dome scraps while you assemble. No one has to know.

How to Serve It

This cake is best cold. Straight from the fridge. The cream stays firm and the honey gets a little chewy.

Slice with a sharp knife. Wipe the blade between cuts if you want clean slices. I never do. My slices look like they were cut by a five-year-old with a baseball bat. No one cares.

Serve with coffee or tea. It’s also good with a glass of cold milk.

If there’s any left the next day, it’s even better. The flavors settle in overnight.

A Final Thing

I made this cake for my neighbor’s birthday last month. She said it tasted like something her grandmother used to make. That’s the highest compliment you can get.

All from a recipe I almost didn’t write down.

Sometimes the best things come from not overthinking it.
